Egg-static!As we all know, eggs radiate crazy health goodness. From protein to vitamin B12, eggs are notorious for being a superfood! However, eating them scrambled day in and day out can be a drag. If egg whites are the go to instead of the whole egg, you then loose even more of the tastiness, a.k.a. cholesterol. To make scrambled eggs creamy, add milk to the mixture! For every egg white, add half a tablespoon. Once in the skillet, instead of scrambling right away, let it sit for about a minute and a half. Then with a silicone spatula -- or something similar -- slowly turn over again and again while it cooks. Don't scramble until its well cooked. Next, add any choice cheese while the egg cooks for its last couple of minutes so it gets melty and gooey! Once transferred to its eating dish, add a choice seasoning or garnish. Anything from parsley, Cajun spice, green onion, or red pepper flakes -- have fun with trying various options! Raving for Ramen!

I first got the itch to make today’s healthy recipe of lettuce wraps a couple of years ago after I got a taste for the chicken lettuce wraps at PF Chang’s. But when I was asked to write this blog for today, at first, I was hesitant because I am not a writer. But who can go wrong when talking about food? Am I right or, am I right? And so far, I have had no complaints about these yummy and healthy concoctions. So at least I know I can do those with confidence! How These Wraps Got StartedA year went by after I got my first taste of the ones from PF Chang’s. And when I still couldn’t get how great they were out of my head, I decided to search for a copycat recipe of the ones from the popular restaurant and, boom, there one was on Chungah Rhee’s awesome food website which you can find by clicking the button below! She has so many amazing recipes, but this was one I just needed to try! When I finished her recipe and tasted them, my mouth was in heaven! So, I continued to make them occasionally until a couple of my previous co-workers started asking me to make the lettuce wraps for them. From there, it was kind of a secret tradition for a while. Fast forward to June 2021 and here we are – finally getting the chance to share this recipe! So, let’s get down to the nitty gritty. About the Lettuce Wraps
The ingredients for these wraps are budget friendly. So, if you are worried about burning a hole in your pocket, I’m here to assure you, all of the ingredients that I used were found at your local Neighborhood Kroger, or whichever grocery store is your preference. No joke, if you consider yourself a pro in the kitchen, then you can knock these out in less than 20 minutes. You can eat these at your social-distanced event as an appetizer, or just use these as a full-on meal! Either way, they are delicious, healthy, and truly easy for everyone to make. Copycat Lettuce Wraps RecipePlease keep in mind that while I primarily based my recipe on Chungah Rhee’s, I've been making these for so long that I've made tweaks here and there. Mainly due to the fact that so many of my family and friends prefer when I use ground turkey. Chicken and turkey...two very different birds! Yield: 4 servings Prep time: 10-15minutes Cool time: 10-15minutes Total time: 30 minutes or less (depending on your level of cooking) Ingredients: 1 tablespoon of olive oil 1 pound of ground turkey or chicken 2 cloves of garlic, minced 1 onion, diced 1/4 cup hoisin sauce 2 tablespoons of low sodium soy sauce 1 tablespoon of rice wine vinegar 1 tablespoon of Sriracha seasoning or sauce (optional) 1 can (8 ounce) of water chestnuts, drained and diced 2 green onions, thinly sliced Salt & pepper for tasting 1 head of butter lettuce (make sure to rinse) *iceberg lettuce works just as well* Directions: 1. Heat olive oil in saucepan over medium heat. Add ground turkey or chicken until browned (if using turkey be cautious, as it can dry out quickly) for about 3-5 minutes making sure you crumble the turkey as it cooks; drain the excess fat. 2. Stir in garlic, soy sauce, hoisin sauce, onion, rice wine vinegar, ginger, and siracha until onions become translucent. 3. Stir in water chestnuts and green onions until tender. Throw in some salt and pepper to taste. 4. To serve, place your wrap filling on simmer heat. Grace and FrankieGrace and Frankie currently has six seasons on Netflix (and one final season scheduled) so you'll be in for many, many hours of binging to catch up! Sweet MagnoliasAnother one about starting over with your friends by your side. How can you not love these? This Netflix rom-drama is based on the novels of the same name. Yup! There are 11 novels. The Spanish PrincessI binged the first season after I watched its predecessors. Now, I block off a whole hour each Sunday to watch this historical drama about Queen Catherine of Aragon (King Henry VII's first wife) on Starz! This is one you can watch without a streaming service, but if you don't get those premium channels included in your cable package, you can binge watch The Spanish Princess for free with the Starz app for seven days! Enjoy! ReignReign was my go-to show in college. Also on Netflix, Reign follows the early story of Mary Queen of Scots in France. And while the fashion isn't historically accurate at all, it's definitely a selling point to watch this show. There are some historical accuracies you can learn, though, since there aren't too many Hollywood depictions of this misunderstood queen. Normal PeopleAwesome writing? Check. Perfectly cast? Check. Will you cry? Check. The BBC really knocked this one of out the park! And thanks to Hulu, us Americans get to binge this amazing show. Sadly, there is only one season, and it will probably stay only one if the book is any indication. But trust me when I say you won't regret watching the one and only season of Normal People because you'll relate in one way or another to the characters since we are all normal people, too! Schitt's CreekWhile we'll never figure out how to "fold in the cheese", we do find out why Schitt's Creek is definitely the show of 2020! It's pure comedic genius brought to us by the father-son duo Eugene Levy and Dan Levy. No family is perfect, and this one takes the cake with dysfunction. But despite the quirkiness of them all, you see the (tough) love emanating in the most hilarious ways! Currently streaming on Netflix and the free streaming service, CW Seed, prepare yourself to laugh until you cry for six whole seasons. Spoiler alert? This show killed it at this years' Emmys. If that's any more indication as to why you should binge watch this show! Never Have I EverWizards of Waverly PlaceBring back your childhood memories with the classic Disney Channel Original Series Wizards of Waverly Place. It's available on the popular streaming service Disney+. Reminisce and laugh through four seasons about the shenanigans of Justin, Alex, and Max Russo. Not only is this show hilarious at its best, it's the feel good show that focuses on family values you'll be excited to watch with your children one day! Friday Night LightsRounding out the list and continuing on the flash-back trend of oldies but goodies, Friday Night Lights' five seasons will send your emotions through the rollercoaster! Available to stream on Hulu, Friday Night Lights will worm its way into your soul and will "Texas forever" stay there. This show set the ball running for many present-day household names like Michael B. Jordan, Taylor Kitsch, and Jesse Plemons. You don't have to love football to enjoy this show, you just have to love damn good tv. Clear eyes, full hearts, can't lose! Morning or night, a great skincare routine for your face can leave you feeling super cleansed and looking youthful! For many, soap and water does the trick. And while there's nothing wrong with that age-old practice since your face is still getting a great cleaning, others like myself opt for a more thorough routine. One regimen I do twice a week in the evenings is my charcoal face mask! I remember the first time I tried one a year ago and wondered why I hadn't been doing this all along! Charcoal masks have been on trend for a long time now, but per normal, I was late to the game. There is a weird feeling of satisfaction when I am slowly peeling my mask off after 15 minutes. Afterwards, I reveal a deeper clean from the chin up! Charcoal works by magnetically attracting things that latch onto your skin no matter how active you are a day. Things like dirt, toxins, heavy metals that are truly bad for your skin. And things like soap and water can't treat. Because I have sensitive skin, I went looking for a charcoal face mask that did its job, but at the same time wasn't too harsh on my skin. I also don't have large pores or suffer from black heads. That meant I could stay along the lines of peels or polishing masks. Thankfully, these tend to be less expensive. Double bonus! Since I adopted using my charcoal mask, I notice each time it leaves my face feeling supple and looking brighter with a truly deep clean, and after only six times, those closest to me saw the effects!
